Second Annual "Red Day"

2nd Annual "RED Day" Set to Lend a Hand in Eugene, Oregon. Keller Williams Realty Eugene & Springfield are part of a community service initiative in the US and Canada.

Eugene, Oregon — Keller Williams Realty associates may be taking the day off on Thursday, May 13, 2010, but it will hardly be a day of rest. Associates across the United States and Canada will spend their day off by giving back as part of the company’s community service initiative, RED Day.

Short for "Renew, Energize and Donate," RED Day was created to unite Keller Williams Realty offices and associates in an international day of service.

During RED Day 2009, over 25,000 Keller Williams associates participated in activities ranging from food and blood drives to cleaning up trash in public parks, doing yard work for neighbors in need or revamping gardens at nursing homes. Last year on RED Day, the company donated over 130,000 hours.

As part of the RED Day effort, Keller Williams Realty Eugene & Springfield has chosen to spend the day with two very important Organizations.

1. CASA - "We will be doing a direct mailer asking for CASA volunteers. CASA has 1000 children in Lane County but only 300 have a Court Appointed Special Advocate (CASA). CASA volunteers are appointed by judges to watch over and advocate for abused and neglected children, to make sure they don't get lost in the overburdened legal and social service system or languish in an inappropriate group or foster home. They stay with each case until it is closed and the child is placed in a safe, permanent home. For many abused children, their CASA volunteer will be the one constant adult presence - the one adult who cares only for them. So this mailer asking for CASA volunteers is very important to our community and in desperate need of getting out."

2. Relief Nursery - This organization is committed to keeping children safe from abuse and neglect. At the core of the Relief Nursery is the belief in focusing on, and building upon, the strength of each individual family. From crisis response, to therapeutic classrooms, to alcohol and drug recovery support, this organization works to keep children in our community safe from abuse and neglect. "We will be helping out their facility by doing manual labor here. We will be cleaning the classrooms, buses (inside and out), landscape maintenance, cleaning the sand box and playground equipment, power washing, etc. Anything they need us to do we will do."

Blueberry Pie, Anyone?

 

When blueberries are in season, what better to do with them (other than eating them straight from the basket) than make blueberry pie? Blueberries have been found to be a "superfood", so good for you that you should go out of your way to eat them. They neutralize free radicals, protect your heart, improve your vision, and protect against degenerative brain diseases. Yet another good reason to make and eat blueberry pie.

Blueberry Pie Recipe

Ingredients

Crust:

Filling ingredients:

  • 6 cups of fresh (or frozen) blueberries, rinsed and stems removed (if using frozen, defrost and drain first)
  • 1/2 teaspoon lemon zest
  • 1 Tbsp lemon juice
  • 1/4 cup all-purpose flour (for thickening)
  • 1/2 cup white granulated sugar
  • 1/4 teaspoon cinnamon
  • 2 Tbsp butter (unsalted), cut into small pieces

Egg wash ingredients:

  • 1 egg
  • 1 tablespoon milk

Method

1 Prepare the crust. Roll out half of the dough to 1/8-inch-thick circle on a lightly floured work surface, about 13 inches in diameter. Fit the dough over a 9-inch pie pan, and trim the edges to a 1/2 inch over the edge all around the pan. Put into the refrigerator to chill for about 30 minutes.

2 Gently mix the blueberries, sugar, flour, cinnamon, lemon zest, and lemon juice in a large bowl. Transfer them to the chilled bottom crust of the pie pan. Dot with butter pieces. Roll out remaining dough to the same size and thickness as the first. Place on top of the berry filling. Tuck the top dough over and under the edge of the bottom dough, and crimp the edges with your fingers. Transfer the pie to the refrigerator to chill until the dough is firm, about 30 minutes. Heat oven to 425°F.

3 Whisk egg and milk together to make an egg wash.

4 Remove the unbaked pie from refrigerator. Brush the top with egg wash. Score the pie on the top with 4 cuts (so steam can escape while cooking). Place the pie on the middle rack of the oven with a parchment paper or Silpat lined baking pan positioned on the lower rack to catch any filling that may bubble over. Bake for 20 minutes at 425°. Reduce heat to 350°F and bake for 30 to 40 minutes more or until juices are bubbling and have thickened. Transfer to a wire rack to cool. Let cool completely before serving.

Makes 8 servings.
